The History of Graham Flour
Graham flour is a type of whole wheat flour. Was invented by Sylvester Graham, a forerunner of the health food movement. Graham developed the flour in the 1830s in hopes of diverting people away from refined white flour. It’s awesome! In the 1830s his Graham hotels promoted vegetarian and condiments such as graham flour. If you have never tried waffles with graham wheat, you’re missing out. The flavor is unique, and as Sylvester revealed to the world, it’s healthy.
You can purchase graham flour just about anywhere. It’s interchangeable with whole wheat pastry flour as it’s milled from low-protein soft wheat – and yes, it’s what makes graham crakers so loveable! Mellow and flavorful, it adds whole grain nutrition to pastries, pancakes, waffles, and biscuits without density or heft.
WAFFLES WITH GRAHAM WHEAT AND STRAWBERRY JAM

In a large bowl whisk all the dry ingredients together well. Set aside.

Microwave in a large glass bowl, or stovetop using a small saucepan, melt the butter and then add the milk and eggs whipping the eggs well to incorporate them thoroughly.
Add the Milk Mixture to the dry ingredients all at once and mix well, yet try not to over mix, the more mixing the less fluffy the waffles will be. It’s actually better to have a few flour lumps than over mix.
Oil the preheated waffle iron with corn oil. Follow your particular iron instructions. Waffles will cook on average in 1/2-2 minutes in a well made hot iron.
Serve immediately warm with maple syrup and strawberry jam. They are best warm and fresh.
Chef Notes: If the waffles take more than 3 minutes the iron is not hot enough, they should be a nice dark brown golden color and will appear to have an uneven rustic look as in the picture above.
Variations: Substitute whole wheat pastry flour for graham if it’s not available. 1/4 cup of wheat germ or bran can be added with the addition of 2 tablespoons of milk, and for a an even richer flavor, use 2 tablespoons of milk powder with the addition of 1 tablespoon of milk. Storing: waffles freeze well for 30 days. If cooking them with the intention to freeze them, under-cook them slightly and pop them in the toaster for quick snacks and or breakfast.
